The passage of time has tastefully brought together the flavors of Spain, Italy, the Middle East, Africa and China, and blended them into what is now Dominican cuisine.

Dominicans traditionally have three meals a day.  The most important meal is traditionally served midday.  The dish usually consists of white rice, stewed beans (white, red or black), meat, salad, and fried plantains.  This dish is known as the “Dominican Flag.”

Popular Dominican chef and television personality Eugenia Rojo explained that the midday meal can also feature a chicken and rice dish, rice with beans, rice soup and the “Sancocho,” which is perhaps the country’s most important dish.  It is a stew made with various meats, chicken and vegetables.

These local dishes are prepared in most homes.  But, most important of all, they are also available in local restaurants.  In Santo Domingo, specific restaurants provide the international visitor with an ample menu of Dominican cuisine.  Recommended restaurants:  Moroconcoco, Meson de Bari (a trendy spot in the Colonial Section); Adrian Tropical, in the “Malecon,” the seaside boulevard; “Buen Provecho,”  “El Conuco,” and “Villar Hermanos Café.”

El Meson de Bari

Famous for its variety fried “empanadas” made with cassava flour and stuffed with seafood, meat, chicken or cheese.  The restaurant’s goat stew, served with rice or potato of your choice, is one of the finest in the country. It is one of the oldest and finest of the city’s typical restaurant.  It is situated in the very heart of the Colonial Section, in an old colonial home. Buen Provecho

This diner-like restaurant is famous for its stewed beans and mashed green plantains.  Situated in the heart of Santo Domingo, in one of its most central areas, the restaurant offers a daily buffet consisting of Dominican dishes.  A typical Dominican breakfast is also available every day.  It is an excellent choice for those who enjoy home-style cooking.  For information, please write to: buenprovecho@gmail.com.

Adrian Tropical

Their main restaurant is situated just a few steps away from the hotels found along Santo Domingo’s seaside boulevard.  Specializing in “mofongos (fried green plantains mashed with garlic and pork cracklings), the dish is served on a wood recipient called a “Pilon”.  This wood instrument was traditionally used by the Tainos, the native inhabitants of the island, to mash food products.  There are four restaurants in Santo Domingo, and all are centrally located.

El Conuco

Situated just steps from Santo Domingo’s most important downtown hotels “El Conuco” specializes in the typical Dominican “Sancocho,” or beef/chicken stew.  Their noon buffet offers typical food at very reasonable prices. For information: administracion@elconuco.com.do.

Moroconcoco

The restaurant’s most popular dish is the stuffed roast.  It is a restaurant aimed at young by mergers of dishes. Three times a week, at night, open a gourmet basket, where depending on the day, prepare a different meal, but creole. (C / Eduardo Jenner No.4, The Esperilla, moroconcoco@gmail.com)

Hermanos Villar Garden Café

Their most popular dish is the mofongo, but offers a wide variety of national dishes. (Independencia esq. Pasteur, Gazcue, mariavillar01@hotmail.com)
